This is a healthy yet delicious version of everyone’s favorite breakfast — pancakes! Healthy additions and/or alternatives include whole wheat flour, fresh blueberries, cinnamon and nutmeg. Other variations include the addition of apples, raspberries, blackberries, bananas, chopped walnuts or pecans.
• 2 eggs
• 1 ¾ cups of skim (non-fat) milk (add more for thinner pancakes)
• ¼ cup oil (canola, corn, safflower)
• 1 ¾ cups of whole wheat flour (add more for thicker pancakes)
• 2 tablespoons of sugar
• 4 teaspoons of baking powder
• ½ teaspoon salt
• ½ teaspoon cinnamon
• ¼ teaspoon nutmeg
• 1 cup of fresh blueberries
1. Beat eggs in a large bowl. Add milk and oil.
2. Add flour, sugar, baking powder, cinnamon, nutmeg and salt. Mix well.
3. Add blueberries and mix well.
4. Heat skillet over medium-high heat; lightly grease with cooking spray and small amount of oil (when heat is just right, drops of batter will sizzle and bounce)
5. Pour ~1/4 cup of pancake batter onto hot skillet
6. Cook until edges bubble and appear cooked (~2 minutes)
7. Turn pancakes, and cook until golden-brown
